Smoke Wood

An all time Southern favorite for fowl  (turkeys, chickens,  Cornish hens, etc).  It's smoky, but not bacon flavored, and that's why the ladies in our home like it with birds. 

Lately, a lot of folks are fussin' over whether or not to use smoke wood with the bark still on it? Well, we never take the bark off the wood. Fact is, down South in 'Bama some folks even use Pecan shells and Hickory husks for smokin'. It's really just whatever you like!
