the C-burner configuration. There's an aluminum plate sitting atop a
couple of bricks, which allows you to access the smoke can (not shown).
The plate helps to diffuse the smoke, and the heat, but lets enough
through to boil water in the waterpan. A large oblong water pan will
do the same thing, and it will also do a good job catching the meat
drippin's. |
