The old vegetable tray can make an excellent water pan.  This one's setting on the bricks.  It needs to have at least 1/2" clearance around the outer edges, which is usually the case, or you can pick one up at the junk appliance place for a song.  You may have to plug a few holes with screws, or weld.  This method is good when smoking meats with high fat content.  The juices drip into the boiling water, and won't make a lot of smelly "fat smoke", like when they fall onto a hot metal plate.  And there's almost no chance they'll catch on fire as long as you don't run out of water.  The boiling water helps keep the meat moist and steams it while it's smoking.  Hard to beat!
