C-burner
cabinet type smokers
A piece of (scrap) aluminum tread plate was cut about an inch or so smaller than the inside dimensions of the Frig. box, and laid down on top of the bricks. Aluminum tends to spread the heat from the area over the burner more evenly than steel, and the heated air and smoke needs to be released at the outer walls of the box.  This is only used when doing low temp smoking of sausage or jerky (or maybe fish).  I usually use the plate when I'm looking for a drying effect on the meat.    Also, the drippin's will tend to "flash" when they fall down on the hot surface.  They will build up a thick layer of grease that needs to be scraped off between uses.
